Best of the Menu interview with Dain Cooke

Q | What is the most popular dish on your menu? Why?
A | Fettucine and meatball. It has our famous meatball topping our fresh fettuccine alfredo pasta with some of our house-made marinara sauce. When our guests enjoy this dish, the sauces marry together to create a rosé sauce for the diner, a perfect Italian dish.

Q | Are there any items NOT on your menu that are staff favorites (that you’d be willing to serve up to any customer who asked)?
A | Our gnocchi prepared with the brown butter and sage sauce. It used to be on the menu when we first opened but we changed the presentation to have a lamb Bolognese sauce. Most of our associates still love the original version.

Q | You have a pretty extensive gluten-free menu (especially for an Italian restaurant)! What are some popular choices from that menu?
A | Any of the pizzas! We hear it so many times from our gluten-free guests that they haven’t been able to find a good gluten-free pizza that still have a crispy crust. We also make our own gluten-free bread in-house which is very popular. We even have guests call us to order our bread just for pickup.

Q | Anyone who has been to Marcella’s knows that customer service is top priority. Rumor has it you’ll do pretty much anything for your customers. Care to elaborate?
A | Our company lives by “Yes is the answer, what is the question?” We believe that making a guest experience the best possible in our restaurant is our first and foremost important goal. If that means that we need to run next door to our sister restaurant to acquire an item that we normally don’t have, we will do everything we can to make that happen.

Q | Speaking of doing things for your customers, I heard that if I ask your waiter for a recipe, they’ll give it to you. That can’t be true…can it?!
A | Yes, we share our recipes with our guests. We have even made some into a more home friendly portion size. This way guests don’t have to make the full quantities that we would for the restaurant.
