Basket of fresh blueberriesThis blueberry crostata is a delicious way to showcase blueberries when they’re in season. It’s rustic, delicious and perfect for dinner parties. There may be a little extra pie dough or streusel left over, but they are both versatile and can be frozen for later use.

Ingredients

  • 2 pints fresh blueberries
  • 2 cups white wine
  • 2 ½ cups sugar
  • ½ tablespoon flour
  • 8 pie dough circles – recipe below
  • 1 egg
  • 1 cup walnut streusel – recipe below

Preparation

  1. Bring wine and 2 cups sugar to a boil and add berries for about 30 seconds or until the liquid starts to turn blue
  2. Strain berries and reserve liquid for later use
  3. Lay out pre-cut dough circles
  4. Mix berries, flour and ¼ cup sugar in a mixing bowl
  5. Place 1/3 cup blueberries in the middle of each dough circle
  6. Fold up the sides of the dough around the berries
  7. Brush the outside with beaten egg and sprinkle the sides with the remaining ½ cup of sugar
  8. Bake at 350 for 10 minutes until the dough becomes golden in color
  9. Remove from oven and add 2 tablespoons of streusel to the center of each tart, lightly covering the blueberries
  10. Return to the oven for 10 more minutes until the tart and streusel top are golden brown

For the pie dough

Ingredients

  • 1 1/3 pounds flour
  • Pinch salt
  • 1 pound butter, cold
  • 1 cup water, ice cold

Preparation

  1. Cut butter into small pieces
  2. Place flower and salt into mixing bowl with paddle attachment
  3. Add butter and mix until it begins to look like a thick cornmeal (there should still be pea-sized pieces of butter)
  4. Add ice water until the dough begins to pull together
  5. Remove dough from the mixer and knead into a smooth ball
  6. Flatten the dough, wrap it and refrigerate for an hour until needed
  7. Roll out pie dough until 1/8-inch thick
  8. Cut rolled dough into 10-inch circles, dough may be re-kneaded and rolled twice more
  9. Dough may be wrapped well and frozen. Thaw 24 hours before use

For the Walnut Streusel

Ingredients

  • 1 cup flour
  • ¾ cups brown sugar
  • ¾ cups chopped walnuts
  • ¼ pounds butter

Preparation

  1. Place nuts in food processor and lightly grind finer
  2. Add brown sugar and flour and grind again
  3. Chop butter into small pieces, then add to food processor and blend until butter forms small streusel chunks
